An initiative to create a healthy regional food system for the Ark-La-Tex is the motivation behind an event Sunday in Shreveport called “Greens on the Red.”
The event will recognize the wide variety of greens that can grow in this region. The first “Greens on the Red” will showcase 18 greens, according to LSU Extension Agent Grace Peterson. She says she hopes to demonstrate that growing leafy vegetables doesn’t have to mean planting a high-maintenance garden.
“You really can grow a salad in a flower pot. You can create recipes that are very nutritious and tasty at the same time. We just have a huge variety of greens to choose from. The Ark-La-Tex really can be the greens capital of the world because we can grow all of those here," Peterson said.
Table displays will highlight the plants and show how they can be used in recipes and salads. Attendees can also sample them, Peterson said.
“Greens on the Red” will be held from 2 – 4 p.m. Sunday at the Highland Community Garden with a rain site nearby at the Volunteers of America Highland Center Gym.
